The corporations have been busy and they have some shockingly unhealthy food to offer nowadays. I am thinking I should adopt the saying "Avoid the bakery, avoid the consequences." To your health. ..from eating there. I can't believe how bad this stuff is:

Avoid. I just feel like bakeries are harming people at this point. And I would definitely suggest this would help get butter/eggs out of your diet for people going vegan.
I've had to stop having any white flour. It just seems bakeries make everything look amazing, but you really have to stop and just think about it and say you don't need white flour. White flour I guess is a sign you are eating but not getting any nutrition. It isn't made in the healthiest way and isn't healthy.
its sort of tough to buy bread. I kept striking out because I got home and read egg white on the ingredients. There are kinds that just say "dairy free." I am trying to challenge myself to just shop at only a few places to get the kind of bread with no eggs. I have found a couple of places that offer vegan bread. And it clearly says no eggs on the front of it. But there are entire parts of the store I can't shop in for bread. Usually the entire bakery. I sometimes get really lucky and can just buy what I want. Because they use oil to make the bread. I love it when it seems to be low cost because it is vegan.
Normally it seems the definition of bread is "eggs, mixed with butter and flour." It is just frustrating to buy a diary free bread and then find out later it has egg whites in it. I have had luck if I shop for bread in the freezer section. There is a freezer full of bread with a lot more options than they have as fresh bread. The trick is you have to take out like 5 slices, then cover with plastic wrap and let it defrost over night in the fridge. Then you basically have the normal fresh bread you are trying to buy
When I still ate bread, I think I first changed from buying french bread to sliced bread, then to pita. Then I discovered the wonders of bread machines ...To finally realize that bread is bulk and that I could eat better stuff instead.

I think I remember you saying use a bread machine. I mistakenly thought Udi's brand bread was vegan. But like I said found out that they use egg whites. And it also reminds me of why I went egg free. Because of the horrifying issue of chick-culling during the production of eggs. So it isn't like egg whites are that amazing, it still involves the use of chickens. Where you get the factories out that that do culling of the chicks just to set up chickens for egg laying. So I think I have solved the problem. Well I went to breadsmith and because I had earned a free bread because I had enough stamps on my card. they convinced me to get the whole wheat loaf. Because the french bread apparently is a very cheap item. So I did ok with what I got. The bread looks very very good, it still had honey. But the main things I avoided that I set out to avoid I didn't have any problems with. Since I am very determined to avoid dairy (they are dairy free at breadsmith at least) as well as eggs. I also realized I didn't actually pay money for the bread that time so I didn't put money towards animal products. It is tough but I really want to keep my money from going towards producing the stuff. I guess you just have to be really prepared when you go shopping I am going to be for bread for sure now
It looks like the multi grain bread is completely vegan according to their website! So I think I will be back there for a couple things I like that they have vegan options. I just had to find that out for myself they really don't say that they have vegan bread when you are there. There is no indication they just know to say at the store they are dairy free
I made a vegan poppy-seed apple cake from this book today. Tasted amazing. I like how they have a vegan "section" in the middle of the book. But the cool think I discovered is in the beginning they explain how to "exchange the fats" in recipes. So just by making the very few vegan recipes. I later just exchanged the animal fat to plant fat in the recipes with the beginning chapter and I am amazed that it always works to change butter to oil and the like in the recipes. It always tastes amazing with no animal products. The cake was a hit; you have to serve it warm though to compete with the regular cakes out there with butter and eggs in the (vegan is better) The recipe was vegan in the name so I didn't have to edit it. It is like a flavorful poppy seed muffin in taste with orange zest flavor
And so by making diabetic "versions of recipes" like a vegan/diabetic cake a diabetic person could also eat your dessert with you (and be healthy.) If you don't know anyone diabetic it also means that really fit and athletic people (weight loss as well) can eat this dessert. Because they only include the very healthiest amount of sugar (a nightmare amount of sugar in is gas station and grocery store & restaurant desserts.)
Beyond that they make use of fruit to further sweeten it to a dessert. I think the book is really creative. So make this dessert too! I think the book is cool. And like I said it really makes me think about using fruit instead of sugar. But it does all the work for you and encourages you to be creative with your recipes and make them a lot healthier. I think it is easy to make but I did have to buy a spring pan.
